This week will sees us hosting a 7 course tasting menu in the college as part of the Pig Town festival that’s going on in Limerick for the month of September.
What is the Pig Town festival you may ask, well Pig Town was set up a number of years back and celebrates Limericks long association with the Pig Industry.
Until the recent past we have had several Pig factories in Limerick with Mattersons been the most recognisable although sadly it no longer exists.
Another internationally recognisable product from the Limerick Bacon industry is of course Limerick Ham which has the delighted the plates of the normal household to the gilded plates of noted restaurants for many years.
So tonight LIT celebrates not just our association with Bacon and the Pig industry but indeed with all things local with some of Limericks finest foods been use in our menu preparation.
We have created such a delicious menu where our guests will savour on everything from locally sourced honey , rich plump plums, Local cheeses, locally sourced Halibut and the finest Port Fillets for our main course.
We are a team of nine Chefs tonight each with his or her own strengths and weaknesses looking forward to creating and bringing our own individuality to the dishes we create and a memorable night will be had by all.
